On March 13, 2015, Insaf Abdel Mesieh Bekhit, 89, passed away, after a courageous, four-year battle with cancer, surrounded by her adoring family in Denver, Colorado. She was raised in a small village in Egypt, and worked beside her father in his jewelry store until moving to the United States in 1978. Shortly after immigrating she began a successful career as a baker in Minnesota before retiring to Denver in 2005. Her family will always lovingly remember her as a strong woman, a faithful Christian, and a devoted wife. She was a caring mother, grandmother, and great-grandmother, who enjoyed spending time with her family, cooking, and sewing. She was preceded in death by six sisters, a brother, her daughter, Suzan Yacoub, and husband, Mater Bekhit. She is survived by three sons, Kamal, Magdy, and Gamal Bekhit, a daughter, Samira Shenouda, 15 grandchildren, and 12 great-grandchildren. Rest in peace, Teta. You will be greatly missed.
